Served with jerk chicken, jerk pork or any grilled food. This jerk sauce is so irie it goes with almost everything!!! YAH MON!!!

Ingredients

4 tbsp Homemade Marinade
Drippings from Pan if Available
1 tsp Vanilla/Nutmeg
2 tbsp Brown Sugar
1 tbsp Butter
Roasted Ginger
Fresh Garlic
Bay Leaves
8 Pimento Berries (crushed)
1 Stalk Rosemary
2 tbsp Tomato Ketchup
¼ cup Chicken Stock

Directions

Heat butter and sugar in a pan allowing to caramelize, add reminding ingredients along with chicken stock and bring to a simmer for ten minutes.

Tasting and adjusting the flavour as you go along, this full bodied jerk sauce is ready once the mixture starts to thicken to a sauce like state.
