LOLA’S CURRY VEGGIES

Ingredients

 5 Baby potatoes (slice in chunks)
 1 Zucchini (cubed)
 1 Large Carrot (slice in chunks)
 ½ cup Bean of choice ( precooked.... I use grace broad beans)
 2 tbsp Green season (recipe in files)
 1 tsp Turmeric or Curry Powder
 2 pinches Salt and Pepper
 Fresh veggies (ginger ,garlic ,shallot, bell peppers ,cilantro)
 Mushroom
 1 cup Water or Vege Stock
 1 tsp Olive oil

Directions

The very first step is getting all the ingredients rinsed and prepped for this delish meal......
Rinse under cool running water, and cut/slice according to preference.......

Add 1 tsp olive oil to the pan on medium heat, add the fresh garlic and ginger, stir to prevent from sticking
Once the garlic and ginger starts to burn a little, add the potatoes and stir to combine.....reduce heat to very low and allow a minute or two before adding half of the liquid (water or vege stock)....
Once the liquid is added ,cover and let cook for 10 mins....(increase flame to medium low heat)
After 10 minutes of cooking add the carrots, salt powdered spices and continue cooking for another 5 minutes....(more liquid might be needed at this point)

Taste and adjust the spice level before adding the zucchini , beans and mushroom......
Once those are added to the pot ,cover and allow to simmer on low for about 5 or 7 minutes...
taste and adjust spice level one last time and ensure you don't overcook the veggies or stir the pot too often.....
Once the flavor is one point ,remove from flame and let sit before serving warm!!!
