LOLA’S ISLAND PINEAPPLE CAKE

Start by preheating the oven to 325 degrees....
I also add a pan with water underneath the baking rack.....and allow the 9 inch baking pan to heat up in the oven as well......
Next step is getting the batter ready,(USING THE WHISK ATTACHMENT)
Start by creaming the 4 TBSP butter along with the 1/2 cup of sugar...
Once its light and fluffy,add the egg and whisk on high speed for a minute....
Then go ahead and add all the other wet ingredients..coconut .milk,almond essence etc...
Mix on medium speed until properly combined...whisk for about a minute.....
Next step is getting the dry ingredients ready.....
Using a fine sieve strainer....sift all the dry ingredients......(flour,baking powder salt etc...)
SWITCH MIXER ATTACHMENT AND REPLACE WITH THE MIXING HOOK!!
Gradually fold in the dry ingredients and mix on low until properly combined...(mix for about a minute)
Carefully remove bake ware from oven, add the sugar,nutmeg and butter to the bottom of the pan....
Then add pineapple and banana slices to the pan....(make sure to fill out most of the space)...
Slowly pour the cake batter onto the fruit slices,using a spatula to distribute it evenly and also lightly tap on the counter to remove any excess air bubbles etc....
Place in the preheated oven(with water-bath underneath) and bake for 40 minutes or until toothpick inserted comes out clean.
After 40 minutes,remove water bath, turn the oven off and let the cake sit in the warm oven for ten minutes.
After a total of 50 minutes,remove from oven and allow to cool for at least 30 minutes,before flipping over and revealing all that juicy deliciousness!!!....
This cake is so decadent with all the flavors of the island combined in one....
SOOO GOOOD all by itself or even better with some vanilla ice cream :).......
