PEPPERSTEAK caribbean style

Ingredients

 2 lbs Beef (sirloin or round steak)
 2 tbsp Green Season Marinade (recipe in files)
 1 pinch Salt and Pepper
 1 tsp Cumin
 2 tbsp Beef spice or any other spice of choice
 1 tsp Vinegar (Balsamic is great)
 ¼ cup Fresh veggies (carrot, bell pepper, scallion etc)
 2 cups Water or Stock (might need more) (homemade stock recipe in files)
 2 tbsp Fresh ginger and bay leaves (optional)
 1 tbsp Oil for sautéing

Directions

Cut beef against the grain in equal size strips
Wash beef with with regular vinegar under cool running water.......
Pat dry with napkins and season with spices and green season....let marinade until cooktime

Add oil to a heavy bottomed pot (cast iron or dutch oven style), then add garlic and fresh ginger,
Once the garlic starts to brown add the beef strips and braise for a few minutes ( 3 to 6 minutes) stir occasionally so it doesn't stick to the pot, reduce heat cover and let cook.....
Allow any liquid that was produced during the cooking process to evaporate before adding the balsamic vinegar.
Add stock or water ,bay leaves cover ,increase flame and allow to cook for 30 to 40 minutes.....or until beef is cooked to desired doneness......

Once beef is cooked, taste and adjust flavor, add fresh veggies , stir and cook for about two more minutes....
Remove from flame and let sit for 5 minutes before serving.....
….Great over rice, mash potatoes or with ground provisions!!!
