TOMATO AND RED BELL PEPPER ROAST CHICKEN

Remove any feathers, unwanted skin etc on the whole chicken....
Remove the back done and then make a small slit on the underside of the breastbone, Use hands to gently press the top side of the chicken breast until its perfectly spatchcocked.
Rinse with vinegar under cool running water then pat dry with napkins.
Add the olive oil and powdered spices, cover and allow to rest for an hour or even from overnight.
Pre heat oven to 450 degrees, allow the roasting pan to heat up with the oven as well.
Once oven is heated, add chicken to oven ( ensure the roasting pan is covered) and allow to roast for an hour.
After an hour, add water to food processor or blender and blend the tomato, red bell pepper, and garlic together and pour over the chicken, return to oven uncovered and roast for another 40 mins.
Chicken is ready once its cooked to your desired preference.
Ensure there's enough liquid left for gravy, you can add water or chicken broth if more liquid is needed before the chicken is completely cooked.
Once done ,let rest for about 25 mins before serving warm to family and friends.
