HOT CROSS BUNS

Ingredients

 3 cups Flour
 1 cup Milk (warm, add a pinch of salt)
  cup Brown Sugar
 2 tsp each of Cardamom, Nutmeg, Ginger powder/ Fresh Ginger
 1 Egg (room temp)
 2 tbsp each of Butter (unsalted and melted) Fresh Orange zest and Yeast (quick yeast was used for this recipe))
 1 cup Raisin
FOR THE CROSS PASTE
  cup Flour
 1 tbsp Fresh orange juice
 1 tbsp Vanilla
 Milk enough to form a thick paste
FOR THE GLAZE
 1 tbsp Unsalted Butter
 1 tbsp Fresh Orange Juice

Directions

This recipe is as simple as it gets.
Add flour, sugar, raisins, cardamom, nutmeg, orange zest in a bowl...
Combine then set aside while you work on the wet ingredients....
In a mixer or another clean bowl add milk (warm to activate the yeast), melted butter and mix for about 30 seconds, before adding egg and mix again for about a minute. ( remove mixing attachment and replace with the yeast dough hook).
Add the flour gradually and mix for about 5 minutes at medium speed (the dough should be soft).

Once the dough comes together, with oiled hands remove from mixer and place in a greased bowl, cover and place in a warm area for 20 mins....
After 20 minutes, dough should almost be double in size.....Remove from bowl and roll onto a floured surface....Knead for about 3 mins with hands.
Divide dough into 12 each pieces...Roll each piece into a ball and place in a parchment lined baking pan.
Once all balls are spaced out in the pan cover and let sit in a warm place until the oven heats up to 375 degrees.

While the oven is being heated mix the flour paste for the cross .
Once the oven is heated, Using a piping bag or Ziploc sandwich bag....pipe the paste onto the buns to make a cross on each one.
Place buns on the middle rack and bake for 10 mins....After 10 minutes, reduce the oven temp to 350 degrees and bake for another 10 minutes.
Once out the oven brush the buns with unsalted butter and orange juice....
Enjoy with family and friends.
