HEALTHY BANANA BREAD

A healthy and delicious approach to banana bread!!!

Ingredients

1 cup Organic Whole Spelt Flour
1 cup Light Buckwheat Flour
5 Overripe Bananas
¾ cup Coconut Milk
2 tbsp Baking Powder
1 tbsp Soften Ghee(Unsalted Butter or Coconut Oil can work as well)
1 tsp Vanilla
1 tsp EACH Nutmeg, cinnamon powder, Baking Spice, Salt and Ginger powder or freshly grated Ginger
2 tbsp Honey
1 Handful of raisins or dried fruit or nut of choice, (totally optional)

Directions

The very first step is measuring all ingredients and set aside.......
Grease the loaf pan and preheat the oven to 350 degrees as well....

Combine all the wet ingredients (banana, softened butter ,vanilla, coconut milk, grated ginger)
Set aside while you work on getting all the dry ingredients combined (flour, spices, baking powder etc.)….
Prep the raisins or dried fried by lightly coating in flour, which will ensure they dint all sink to the bottom of the loaf.....

Now its time to combine all the ingredients to make the batter for this healthy loaf....
Gradually fold in the flour into the wet mixture, using a wooden spoon or baking spatula.....
Once combined, add floured raisins to batter and fold in about 3 to 4 times (try not to overmix)
Removed greased loaf pan from the oven and pour batter into pan, be sure to tap lightly on the counter about 10 times, to ensure all the batter is properly leveled (reduce air bubbles or having a lopsided loaf)....
Return to oven on the middle rack and bake for 35 to 50 mins or until toothpick inserted comes out clean.....

Once done, remove from oven and let cool in pan for 20 mins.....
After 20 minutes, remove from loaf pan and allow to cool on a baking rack for at least an hour before making the first slice!!!!.....
Great as a healthy desert or for having with your morning coffee....
Great lunch idea for both kids and adult!!!!
