LOLA’S TEA CAKES

Ingredients

 2 sticks Unsalted Butter (soften)
 2 cups Flour
 1 cup Icing Sugar
 1 Large Egg
 1 tsp Each of baking spice, salt,vanilla,nutmeg
 1 tbsp Fresh Grated Ginger
 ¼ cup Heavy Cream
 ½ cup Dried Fruits ( I use red and green cherries for a Christmas feel, you can add what you like based on the occasion)

Directions

Cream butter and sugar until fluffy and light.
Add egg and continue whisking until fully incorporated in the butter mixture.
Add the fruits and change to the mixing hook.

Combine spices, salt and flour together.
Once the egg, butter and fruits are combined, Slowly and flour and mix on low.
Add the milk slowly and ensure the batter is a bit soft.
Chill the batter in the fridge until the oven heats up to 350 degrees.
Also chill the baking tray in the fridge while the oven is heating up.

Once the oven is heated, remove the mixture and baking tray from the oven and scoop the mixture onto the baking tray,
Leave adequate space between each piece.
Place in oven and bake for 25 mins...
Once the tea cakes are baked, carefully remove from oven and serve warm with tea, cocoa, coffee or hot chocolate...
Allow to cool properly before storing in an air tight container.
