Pumpkin Dinner Rolls

Ingredients

 2 cups Flour
 1 cup Coconut Milk
 6 tbsp Pumpkin Puree
 2 tbsp Unsalted Butter
 1 tbsp Quick rise Yeast
 1 tbsp Honey
 2 pinches Salt
 1 tbsp Sugar (or use more honey)

Directions

Make a soft dough by combining, flour, pumpkin puree, yeast, salt, sugar, 1 tbsp. unsalted butter and and coconut milk.
Let dough rest in a greased pan, covered and in a warm place for 30 mins (or according to the yeast instructions)
After 30 mins, knead dough for 5 mins by hand... then proceed to divide the dough into equal pieces and shape the dough into desired dinner roll shape.

Place each shaped dough in a parchment lined baking pan (ensure enough space between each so that the rolls can rise evenly)
Cover rolls and let rest again in a warm place until the oven heats up to 375 degrees.
Once the oven is heated, place pan on the middle rack and bake for 20 mins or until a toothpick inserted comes comes clean.

Remove pan once rolls are done and immediately brush with the remaining butter and honey....
serve warm or allow to cool and wrap in wax paper and cling wrap, then place in a Ziploc bag and store in the freezer until ready to eat...
To re heat properly just pop in the oven and heat until its properly reheated, no thawing necessary.
